Happy Meal Plan Monday, Readers!

HELLO FROM NORTH CAROLINA!!

Guys, we did it!! We have officially moved across the country, during a pandemic, 3,000 miles from California to North Carolina. Yes!

Lots of tears were shed, frustrating moments, long days of driving, long days of waiting for our things, long nights tossing and turning in a hotel room, and more.

But we are here. Our ENTIRE house is unpacked, decor put up, closets organized, and our lives feel like they are back to normal.

PRAISE JESUS!

Now we can get back to our Meal Plan Monday’s woohoo!!

Monday // Lemon-Thyme Swordfish with Israeli Couscous & Cinnamon Sweet Potatoes

I have gotten really good at making swordfish and we can’t wait to eat some fresh coastal fish again!

Tuesday // Orange Chicken with Fried Rice

We have had Chinese food a few times in the last month and I am craving this!

Wednesday // Grilled Steak Burritos with Cilantro Lime Beans

You guys, I am going to make this burrito with seasoned steak, guacamole, FRIES, lettuce, chipolte sauce, and cheese. It’s gonna be good!

Thursday // Leftovers

Friday // Homemade Pasta in a White Wine Garlic Sauce with Sausage and Fresh Vegetables

Since I now have my own pasta roller, and its relatively easy, I am going to make some more homemade pastas! This should be a great pairing.

Saturday // Herb-Roasted Chicken with Rice Pilaf and Thin Potatoes

Marinated chicken thighs, with some yummy rice pilaf and potatoes. I may change to mashed potatoes but we’ll see!
