Meal Plan Monday, May 27th

Last week my husband told me “You are CRUSHING it with these meals.”

So guess what? We are going to CRUSH IT again with this weeks meals!

We are only trying one new recipe this week and that is Mulligatawny soup! If you’ve never had it or heard of it, it is an Indian lentil based soup. SO GOOD. I first had it at a restaurant in Lincoln, NE called “The Oven”. They have amazing food and their mulligatawny soup is the bomb diggity.

All the rest of the recipes are pretty simple and healthy.

Monday // Breakfast Burritos with Hash browns and Fruit

If you love breakfast and love burritos, then this is the perfect meal to start off your week!

This weeks burrito will have eggs, bacon, sausage, cheese, red potatoes, and peppers.

I will also make my own hash browns too! This is kind of a tedious process but so worth it. See the results next week when I make them!

Tuesday // Turkey Breast with Roasted Broccoli & Carrots

I will throw some seasoning on the turkey breast, let it sit for a bit and then bake it!

Also, super easy to throw in some carrots and broccoli here. Maybe some dinner rolls too!

Wednesday // Chicken and Shrimp Stir Fry

I used to make this all the time when were first married because it was the only thing I knew how to make. That and baking chicken in the oven. Thankfully I’ve come a long way since then!

Marinate the chicken and shrimp in a soy sauce marinade, cook some rice and veggies. Throw it all together and eat!

Thursday // Lemon Thyme Swordfish with Butter Pasta and Zucchini

If you have never eaten Swordfish, now is the time to try it! It is often called the “Steak of the Sea” because it has a really meaty, thick texture, similar to Ahi Tuna. But I personally think its yummier than tuna.

I found a recipe on how to make it once and then I never found it again. But it was easy so I remembered but its a little long and detailed for this post. Basically I do a sear and bake method with butter, thyme, garlic and lemon juice.

Friday // Mulligatawny soup!

I have been wanting to make this soup for awhile so I am glad I chose to do it now. I really, really hope it turns out well!

Saturday // Breaded Chicken Cutlets with Roasted Bacon Green Beans and Orzo

For breaded chicken, I will cook this in the pan. And for breading it, I don’t use a normal method of flour, egg, and bread crumbs. I melt butter, dip the chicken in that and then dip it in the bread crumbs. I find that it is a little lighter and gives it a nice crunch.

For the green beans, I’ll cut up some bacon and roast it in a pan for about 10 minutes, then throw in some fresh green beans and roast for a little longer.

I cook up some orzo pasta in chicken broth and throw some freshly grated Parmesan cheese to make it cheesy.
