Meal Plan Monday, May 20

Happy Monday, readers! 

I know you all are so excited for this week’s meals and so am I! This week we are trying out FOUR new recipes! Woah! Normally I try for one, maybe two, new recipes but I am really trying to switch it up, learn more about food and cooking, and also become the world’s greatest home cook ever so, new recipes it is!

One of the meals was requested by my husband! So, I found one that seemed easy to start with. What is it you ask? Well it’s a ramen bowl! I’ve never eaten one with all the cool mixings before and they are becoming very popular. So we are trying one this week!

Monday // Pan Roasted Steak Pasta with Pecans

I will also bake some dinner rolls and throw in a side of green beans too!

Tuesday // Chicken Saltimbocca with Strawberry spinach salad and Rice Pilaf

This is probably one of my top 10 favorite meals that I make. I get the recipe from one of my favorite cook books called “The complete ‘Cooking For Two’ cookbook”

Saltimbocca is a chicken cutlet wrapped in prosciutto with sage. Very yummy! You can probably find plenty of recipes for it on Pinterest!

The strawberry spinach salad is amazing, this recipe you will NOT find anywhere on the internet, trust me I tried… It is a friend’s grandmothers recipe and my lips are sealed on this one, sorry guys.

The is my favorite Rice Pilaf recipe I found on Pinterest, super easy and yummy!

Wednesday // Red Snapper with Israeli CousCous and Veggies

I am going to Pan sere some season red snapper fillets with some fluffy couscous (one of our favorites) and roast some broccoli, maybe potatoes and carrots in there!

You can check out the “recipes” highlight on my Instagram page for the cous cous recipe! But otherwise here is the super easy recipe. (Props to my Mother-in-Law for the recipe)1 C Israeli (pearl size) Couscous

  1. 1 T butter
  2. 1 C Chicken broth – low sodium
  3. 1/3 C orange juice

In a 10 inch skillet, melt butter on medium heat. Add couscous and brown for 1 minute. Add chicken broth and orange juice, stir until combined. Cover and let it simmer on low heat until all liquid is absorbed and couscous is fluffy- about 10 minutes. Serve and enjoy!

Thursday // Pesto Garlic Chicken Flatbread with a side of fruit

Never tried this before so we will see how it goes! For a side of fruit I usually do berries, mango, pineapple and sometimes peaches!

*I am not following this recipe to a T, as I will be adding pesto and some of my own elements but this will will be my general guide.

Friday // Brown Sugar Ham with Cinnamon Sweet Potatoes, Broccoli, and Rolls

This is a super easy, pain free meal. All I do is grab a ham steak from the store, rub some brown sugar on it, let it sit for about 30 minutes before cooking it and then pan sere it! Only takes about 5-7 minutes to actually cook on the stove top.

For the sweet potatoes, I cut them up into half inch size pieces, put some seasoning on them and roast them at 425 for about 20-25 minutes! Find it on the Recipes highlight on instagram.

I roast the broccoli for about 15-20 minutes with one of those Mrs. Dash seasonings and it’s delicious!

And the rolls.. Well this is the hardest part. I buy frozen rolls, and then bake them for 10 minutes. Super hard, I know. But they are well worth the work! (Haha)

Saturday // Beef Ramen Noodle Soup

I have never made this kind of meal before so lets hope it goes well!
