Happy Monday, readers!
Here is the weekly meal plan all ready for you to go!
Last week I took a little break from cooking. We went out to dinner a few times, I didn’t have to cook one night, it was a nice little break.
Now, I am back in the creative bin of thinking of new recipes and meal ideas!
We don’t have anything too crazy this week, some more simple meals, BUT, simple meals done well make for amazing dinners.
Also, I’m thinking of doing #TacoTuesday every week and trying to figure out different types of tacos to make. What do you think? Tell me in the comments below!

Monday // Pan Seared Salmon with Israeli Couscous and Green Beans
This is one of our favorite meals to make because it is super easy and takes maybe 20 minutes to make! Also, healthy and delicious too.

Tuesday // Steak Tacos!
Because every Tuesday is #TacoTuesday I decided to make Steak tacos this week!
One of the key ingredients to making great steak tacos is….. Fresh squeezed orange juice! Yep. It really brightens the flavor of it!
I will also make some of my Mexican rice and some of my guacamole on the side too!
Wednesday // Croissant Sandwiches with Fresh Fruit
Croissants are one of my many weaknesses when it comes to food. Anything that involves carbohydrates or Chocolate, I can hardly resist.
This is a very easy meal to throw together! Grab your favorite sandwich ingredients and get to eating!
Thursday // Pork Tenderloin with Cheesy Potato Casserole and Broccoli
The main idea for this meal was the cheesy potatoes. I saw them on TV or somewhere in a picture and immediately wanted them! So they will really be the star and everything else will just be thrown in there for some protein and fiber.
Friday // Sweet n Spicy Chicken Thighs with Orzo and Roasted Veggies
Using some honey and some cayenne, along with a few other ingredients, we are going to bake and broil some skin-on chicken thighs and I am here for it!
Some nice Parmesan orzo for the side with whatever veggie is left to be cooked. My mouth is watering just thinking about it.
Saturday // Chicken Gnocchi Soup
This recipe I found off of Pinterest and it is one of the most delicious recipes I have ever made.
It is creamy and good, filled with a little extra bacon and ooohh man I can’t wait for Saturday!
