Meal Plan Monday, June 24th

This weeks meals have been inspired by you guys! I let the Instagram audience pick this weeks meals!

I got a lot of great suggestions and picked a great round of ideas. I am looking forward to making them. There are a couple of things I have never made before and I am interested to see how they turn out!

How do you guys meal plan for the week? Do you just go by the day and pick up groceries as you see fit? Or do plan week by week? Bi-weekly?

Monday // Buffalo Chicken Spaghetti Squash

I believe this is a Whole30 approved recipe. Bake a spaghetti squash in the oven, shred the squash to be spaghetti, throw a sugar free buffalo sauce on there and some chicken, maybe some veggies in there and vua-la! You have a yummy meal.

Spaghetti Squash:

Cut in half lengthwise, rub olive oil all over both halves, sprinkle some salt and pepper on there and bake it at 400 for about 40-45 minutes (depending on the size of the squash) and shred when ready!

Tuesday // Vegan Apple Sage Sausage with Potatoes, Broccoli and Quinoa

This meal was requested by an old high school friend! She requested a vegan meal so I am trying this out!

Usually at the grocery store there is a “Vegan” section somewhere in the produce area. They have lots of alternatives to meat or animal products!

I will sauté the sausage, roast the veggies with some Mrs. Dash seasoning, cook up some quinoa and throw it all together!

Wednesday // Homemade Butternut Squash Ravioli, Sausage and Tomato Sauce

Okay, I was going to try this out a few weeks back but never got around to it and ended up buying store bought tortellini. AND I was going to make my own pasta last weekend but the husband wasn’t home so it also never happened.

SO NOW, it’s REALLY happening. I found a recipe in the big chef book my husband got for me and I am going to make it. I will stuff it with mashed butternut squash that is seasoned with some cinnamon and maybe something spice too.

Cook some Italian sausage in a crushed tomato sauce, throw the ravioli on there, along with some freshly grated cheese and EAT IT!

I am stoked for this meal!

Thursday // Panang Curry with Chicken and Basmati Rice

My best friend Elizabeth recommended this for me. I LOVE CURRY and have never had Panang, which I think its actually spelled Phanaeng, so I am stoked to make this! I think that I have to go to some sort of Asian grocery store to get the real ingredients. I will have to do some searching for this one and I am looking forward to it.!

I have no idea what the main difference is, I believe it is supposed to be thicker and maybe more of a nutty flavor but we will see.

Friday // POKE!

I have seen Poke bowls pop up a lot lately and a good friend gave me a recipe for it.

It is basically a deconstructed sushi roll in a bowl. Sushi is my number 1 favorite food so I am looking forward to this, but I don’t really have to do and “cooking” per say, just boiling some rice.

And meals that don’t require a lot of cooking come to a close 2nd for me next to meals that take A LOT of cooking.

Saturday // Chicken Parmesan Pasta

This recipe, I have mastered. It is seriously the best thing I cook. It is one of, if not his favorite, my husbands favorite meals that I cook. I feel like you can’t go wrong with it either. This is also a recipe that can be easily made vegetarian too. A lot of people use zucchini, eggplant, or spaghetti squash instead of the meat and pasta. All 3 are great alternatives!

I mean, its breaded chicken that is moist, cheese, pasta, sauce. Literally everything about it is amazing. AND it makes for great leftovers too.

This meal takes up my entire kitchen because there are so many different elements to it. But I have mastered how to do it efficiently and it comes out amazing every time.

Unless I leave the cheese on the chicken on the broiler setting in the oven for 30 seconds too long, then I have to scrap some burnt cheese off.
