Happy Meal Plan Monday, Readers!
Hello guys! It is September and the year is just passing by so fast! Seriously, how is it September?
Well anyways, this month I am doing kind of a mental reset. I am going to be focusing on the goals I set at the beginning of the year. Yeah, remember those January goals? I was doing great for a few months but then we move 2,000 miles across the country and that just threw everything off.
I have stuck to some of them. This blog being one of them and I am pretty proud that I have been consistent with it! I enjoy doing this as a creative outlet 🙂

Monday // Teriyaki Turkey Bowls
I found this recipe on pinterest and wanted to use some of the ground turkey I have in the freezer. I will make this with brown rice, add in some veggies, it should make for a good meal!
Tuesday // Sausage Tortellini Florentine Soup
I pulled this meal out of my favorite cookbook “Cooking For Two” from America’s Test Kitchen. Super easy and will make for food leftovers!
Wednesday // Seared Scallops in Lemon Butter Sauce with Sweet Potatoes and Veggies
When my In-Laws were in town, we went to an amazing San Diego Restaurant. Farm to table type of food. I tried a bite of their scallops and they were amazing!
So I am doing my research to try and recreate the same type of scallops. Wish me luck!
Thursday // Left Overs
Friday // Baked Chicken Drum Sticks with Butter Pasta and Green Beans
Saw a picture of baked drum sticks with seasoning on them and they looked good. So I am making it.
Saturday // Honey Ginger Shrimp with Roasted Broccoli and Brown Rice
I started making this recipe when I first started cooking 3 years ago. Its so simple, delicious, and healthy!
