Happy Meal Plan Monday, Readers!
Guess What?!? It’s my BIRTHDAY WEEK!
Woohoo!! Which means we are eating good all week long. All of my favorite foods this week. Well, mostly.
Obviously steak tips in red wine sauce, some pasta, mashed potatoes, and garlic bread. We’ll throw some veggies in the mix to even it out! Haha.
When my husband asked what I wanted for my birthday this year.. I told him to surprise me! I gave him no ideas… Ha! This will be interesting to see what he does/gives. He will not be offended as I say this, let’s just say he isn’t the most romantic of husbands. But I sure do love him.
I’ll let you know what the surprising gift is next week on the meal plan!
Monday // Tuna Poke Bowls
One of the best things about living right next to the coast is fresh seafood. So I am grabbing some fresh tuna poke this week and throwing it in a bowl.
I call these “deconstructed sushi bowls”. Even though Poke is a Hawaiian food, that’s what I call it.
Tuesday // Baked Ziti Sausage Casserole with Garlic Bread and Green Beans
This meal is from one of my favorite online chefs. Once Upon A Chef! It’s yummy sausage in a tomato sauce with cheese and ziti, all baked together. It makes for great left overs!

Thursday // My Birthday!! Steak Tips in Red Wine Pan Sauce with Rice and Green Beans
Okay, I make this literally all the time. Need I say more?
Friday // Fiesta Lime Chicken with Mashed Potatoes and Roast Veggies
I have a new seasoning mix that I am going to test out on some chicken. I am going to “grill” it on my new cast iron grill pan that I am loving!
Saturday // Chicken Noodle Soup
I found a super easy, 30 minute, soup recipe for this one. And its good! So easy and it makes for great left overs and little prep work.
