Happy Meal Plan Monday, Readers!

Happy New Year!! 2020! Man that now sounds weird to say. And how many times will I mess up writing the year now..

I hope you all had wonderful holidays with whoever you celebrated with! We had a blast with visiting almost every single family member, and friend, we knew in the Midwest. However, it felt amazing to come back home to California and sleep in my own bed.

And now back to meal planning every week! I gotta say though, it was nice to have a little break from it. It did wonders for refilling all my meal planning juices! However, I got a new cast iron grill pan for Christmas that I am so excited to break out and try!

Monday // Salmon Cakes with Green Salad and Rice Pilaf

I normally make salmon burgers and add some avocado and toasted buns with it, but this time I am using a different recipe and searing them with some breadcrumbs on top! You’d be surprised with how moist the salmon comes out.

Tuesday // Grilled Black Pepper-Turkey Sandwiches

While we were in my hometown over Christmas break, we visited one of my favorite places called “The State Street Deli”. They have wonderful sandwiches! So I am working to recreate my favorite sandwich from there called the “Michigan Ave” sandwich.

A toasted sandwich with cracked black pepper corn, turkey, bacon, cheddar cheese, and raspberry chipotle mayo sauce. Hopefully it turns out okay!

Wednesday // Cast Iron Grilled Chicken Breasts with Roasted Sweet Potatoes and Broccoli

We also received a new “meat spice” spice! We are excited to try it out with some chicken on the new cast iron grill pan.

Thursday // Chicken Quesadillas with Guacamole and Mexican Rice

I know you all are loving my Chicken Quesadilla recipe. Because they are the best quesadillas I’ve ever had. Go and check out the recipe here!

Friday // Juicy Pub Burgers with Fries and Fruit

And last but not least, finishing the week out with some juicy cheese burgers. Sometimes you just can’t beat having a good homemade juicy burger, right?
