
Happy Meal Plan Monday, Readers!
As much as I love cooking and creating recipes, I can not WAIT to go to a local restaurant in our new town and have a date night. Anyone else feel me?

Monday // Breakfast Croissant Sandwiches with Roasted Potatoes
My husband and I LOVE croissants, and what better way to put them with our favorite breakfast food? We will add some fruit on the side too!
Tuesday // Italian Chicken Salad over Spinach
I have a new natural Italian dressing I’m trying out this week! Spinach, berries, avocados, croutons, sweet potatoes, and the Italian chicken on top!
Wednesday // Carolina BBQ Pulled Pork
Alright, since we live in North Carolina its time to try some real Carolina BBQ. Carolina BBQ is pork and North Carolina has their two different types of BBQ sauces. We’ll add them on top of the pulled pork!
Thursday // Leftovers
Friday // Maple-Bacon Walnut Chicken with Mashed Potatoes and Roasted Broccoli and Green Beans
I have been wanting to try a flavor like this with chicken for awhile and figured why not try now! Hopefully this turns out great!
Saturday // Plant Based Vegan Mac N Cheese
Yep. You read that right. I have been getting some requests to create some vegan and plant based meals. So I am attempting to recreate my favorite guilty pleasure meal into a vegan meal!
