
Happy Meal Plan Monday, Readers!
We have been BUSY lately! From traveling home to surprise my mom for her birthday, having friends come for the 4th, to spending time with friends, to trying to find a house to buy, man!
But we have been loving living in North Carolina and will continue to like it even more when we are settled in a new house.
Here are the meals for this week!
Monday // BBQ Ribs, Mashed Potatoes, Green Beans & Rolls
Over the weekend while our friends were here they cooked dinner for us! I gotta say, it was nice having someone else cook for once. We had a ton leftover and were happy to eat the leftovers.
Tuesday // Tuna Poke Bowls
We also ate some tuna poke bowls while they were here. I bought some extra and froze it for Brendan and I to have during the week. If you can’t tell we are big seafood fans.
Wednesday // Honey BBQ Glazed Chicken Thighs with Rice Pilaf and Roasted Broccoli
I love a good roast chicken with rice pilaf. The flavors go so well together!
Thursday // Leftovers
Friday // Turkey-Bacon Croissant Sandwiches with Mangoes and Strawberries
Sometimes you just need a really easy meal! This is one of them.
Saturday // Beer Battered Cod with Crunchy Potatoes and Green Beans
I haven’t tried this recipe in awhile. Mostly because last time I messed it up and was mad. So we will attempt to try it again!
