Happy Meal Plan Monday, Readers!
I can’t believe it’s almost April! Last week we celebrated one whole year in North Carolina. We absolutely love it here, y’all should come visit!
I have some yummy meals this week too. I have been on a big Spaghetti Squash and Pesto kick lately. Its so delicious!
Enjoy this weeks meals!
Monday // Steak Tips in Red Wine Pan Sauce with Rice and Green Beans
This is our all time favorite meal. So delicious and makes for great lunch leftovers.
Tuesday // Spaghetti Squash with Pesto and Grilled Chicken
You guessed it! As I’ve been trying to eat less grain pasta spaghetti squash is the perfect substitute! I could eat it all day long.
Wednesday // Chicken Stir Fry with Pan Seared Veggies and Rice
Not exactly sure what seasonings or sauce flavors are going into this, I just need to use up what’s in our freezer!
Thursday // Leftovers
Easiest night of the week.
Friday // Seared Salmon with Couscous, Roasted Brussel Sprouts and Rolls
We, well really I, can’t go more than a week without seafood, its just so good!
Saturday // Steak and Cheddar Burrito’s with Mexican Rice and Beans
