Meal Plan Monday, June 10th

Hey guys!  

Last week we tried some super yummy recipes. I had a couple of fails – if you follow me on Instagram then you know what it was. 

I am loving publishing the weekly meal plans because #1 I have a plan all laid out for the week, and #2 I LOVE trying new recipes! 

I am really working to better my cooking skills and knowledge. So I am trying everything new and taking all the suggestions! It has been so fun seeing everyone’s input and following with my little #TheShortChef show!

OKAY– Are you ready for this week’s meals?! I know I am!

Monday // Chicken Quesadillas with Mexican rice, Guacamole!, Chips and Salsa

Remember last week when I said that there would be a super yummy recipe coming to you this week? Well, this might be your hint. 

I cook the chicken in the crockpot with salsa and chicken broth, and many hours later I add some cream. And I have a fun method to cook the quesadillas, I use freshly shredded cheese and rice in them too. 

I am SO looking forward to eating this! 

Tuesday // Summer Fruit Salad 

I wanted to have something a little lighter this week. And this is one of the easiest things to throw together.

Cut up some chicken, season with salt and pepper, cook in a pan.

Have some spinach, or kale or even romaine, ready to go and throw some of your favorite fruits on there! I will be using strawberries, blueberries, pineapple, avocado, walnuts and a (store bought) strawberry vinaigrette dressing to go on top! How delicious does that sound?!

Wednesday // Garlic Basil Mussel Pasta!  

I have only had Mussels once before, and so I thought I would try them again. I really love seafood so I am cooking more of it and trying to branch out. This is the recipe I found for what I will make.

And you know that garlic bread is going in there too!

Thursday // Peppered Pork Tenderloin with Mashed Potatoes, Gravy, and Rolls

I bought a pre-seasoned pork tenderloin because they are super easy to throw in the oven.

For the mashed potatoes, I will boil some russet potatoes, once they are finished I will use a hand blender and mash them up! I’ll throw some heavy cream in, a tablespoon or two of butter, a little minced garlic, salt, and pepper! Yum-o.

Friday // Lobster Rolls with Sweet Potato Chips and Green Beans 

Okay, I have never made anything close to this. Ever. And I am a little afraid to make something with lobster because I feel like I need to have some more skills to cook it first.

BUT, lo-and-behold you don’t need that for this recipe. I found one that seems to be pretty easy and you can buy pre-cooked lobster at the seafood counter at your local grocery store. Phew!

The “Lobster Roll” is a big New Egland meal. Traditionally it is made with mayo and other seasonings but, my husband doesn’t like mayo. I searched for a recipe that has lemon herb butter instead. It is served with some sort of chips, coleslaw, or fries and a big hotdog bun. Hopefully, this meal turns out good!

Saturday // Homemade Spaghetti Noddles with Meat Sauce and Garlic Bread

I have tried to make my own noodles before, and it was a hot mess. Not super hard but the first time I try anything I feel like it doesn’t turn out as intend it to.

So, I am trying this out again. It really is very simple. I don’t have a pasta maker so it will be done by hand. But I am so up for it.
