Happy Meal Plan Monday, Readers!
Man! I can’t believe it’s August already?! What!?
Crazy how time goes by so fast. Anyways, it’s Monday so that means a whole new meal plan is up this week!
I was only planning on doing 5 meals this week but last night I was making pizza, homemade, for the first time and literally had to throw the first pizza away. I was MAD.
Mad at myself, because I know I can do better, and because I have made the dough before so, I decided that I will do an even BETTER pizza this weekend.
And if you are wondering, the 2nd pizza turned out pretty good! Just need to better my baking skills.
If I am working really hard at something and fail, I have to redeem myself or else I feel like I let myself down. Anyone else feel this way?
Anyways, as we have gotten busier with our schedules I appreciate meals that are a little simpler, quicker and just easier to make. So most of these meals will only take me about 20-30 minutes to make. Except for one of them.

Monday // Sloppy Joe’s, Cinnamon-Honey Sweet Potatoes & Green Beans
I saw sloppy Joe’s somewhere in a picture or an add last week and thought, “Man, I haven’t made those in a long time!”
That’s usually how I come up with my meals. And I have a super yummy recipe for this that I got from a friend!
Tuesday // Crab Soup
One of my favorite cooking bloggers to follow is a site called “Once Upon A Chef” and this is one of her recipes!
It only takes about 20 minutes to make and sounds sooo good. I am super excited to make this for the first time!
Wednesday // Seasoned Catfish with roasted Broccoli and Thin Potatoes
I usually try and do some sort of seafood once or twice a week. So I am trying out catfish this time around. I don’t know that I have ever tried it? Maybe I have and just don’t remember.
Anyways, hopefully this is a good meal!
Thursday // Mac N Cheese with Grilled Chicken
This is hands down, my guilty pleasure meal. If there is ever a cheesy pasta on a menu at a restaurant, I really have to hold myself back to not get it.
Friday // Leftovers! The best kind of meal.
Saturday // Spicy Sweet Chicken Thighs with Fruit and Carrots
Okay, I may add some rice pilaf here to give this meal some hardiness but the fruit I will add is strawberries, mangoes, and peaches!
Sunday // Loaded Home-made Pizza – Redemption Meal
Yes, here it is! This is my chance at redemption! I am just going to load the pizza up with bacon, sausage, ham, peppers, onions, cheese, herbs and spices and see how it turns out!
