Meal Plan Monday #23

Happy Meal Plan Monday, Readers!

OH MAN it has been a crazy, busy month for us. We had nine family members come last week to visit and we had an absolute blast with them.

However, we are also exhausted. From friends coming, to being sick for a week, and then family coming. No one is allowed in my house for at least another two weeks. 😄

BUT, I am very excited to get back to my meal plan! My Sister-in-law and niece gave me the cutest gifts when they arrived and they are perfect for meal planning.

How perfect are theses?!

Well, with that being said, here is the meal plan for this week! I hope you all enjoy it!


Monday // Sweet Potato Gnocchi Bowl with Chicken, Zucchini, Broccoli and Carrots

I have been wanting to make my own gnocchi for awhile so I am choosing this week to do it. And then we’ll throw in some veggies, seasonings and chicken in for flavor.

Tuesday // Citrus Herb Chicken with Green Beans and Thin Potatoes

Something a little lighter for this night. Roasted green beans and some baked, crisp potatoes.

Wednesday // Thai Red Curry Shrimp

One of our favorite meals. Curry is so flavorful and yummy! Made with a red curry paste and coconut milk. Delish!

Thursday // Leftovers

Friday // Pasta Carbonara

Pasta Carbonara is an Italian pasta that is spaghetti noodles with an egg and cheese sauce, bacon added and freshly cracked pepper. So yummy!

Saturday // Steak Fajitas with All the Fixings

You can’t go wrong with some fajitas. Add some Mexican spices to the meat, throw some rice, black beans, lettuce, cheese, steak, sour cream, and guacamole to a warm tortilla. Its like a party in your mouth!
