Happy Meal Plan Monday, Readers!
Happy holidays, readers! I hope you all had a fantastic thanksgiving with friends and family.
We spent it with my husband’s family and had an absolute blast! We even hosted a Friendsgiving and I made my first turkey. It turned out amazing, thankfully!
It’s always so fun for us to go back and visit family. Playing games, exploring cities, movies, and gobbles of food. What could be better?
One of my favorite thanksgiving sides is mashed potatoes. I could eat mashed potatoes for days. So, obviously I am making some this week!

Monday // Steak Tips with Red Wine Pan Sauce, Rice, and Green Beans
This meal is in our top 5 meals. The red wine pan sauce is so flavorful and creamy. We can’t get enough of it!
Tuesday // Baked Rosemary & Orange Chicken with Mashed Potatoes and Roasted Broccoli
The orange and rosemary flavors I used on my turkey were delicious so we are throwing them on some chicken!
And of course making some creamy, buttery mashed potatoes too. Can’t have too many!
Wednesday // Pan Seared Salmon with Couscous and Zucchini
Fresh seared salmon, pearled couscous and some veggies. Such and easy meal and only takes about 25 minutes!
Thursday // Seared Flank Steak with Spiced Black Bean and Corn Salsa
You know I’ll be adding some guacamole to this meal right? Oh yes I will! We’ll throw some sweet potatoes into the mix too!
Friday // Tandoori Chicken with Yogurt Sauce
This is a recipe from one of my favorite cook books! The chicken is marinated in a curry yogurt sauce and it makes it so moist and juicy!
We’ll throw in a side of naan too. Yum!
