Happy Meal Plan Monday, Readers!
Hey guys! I hope you all had a wonderful weekend. We got some much needed rest and are looking forward to a busy week!
I had an idea this week. You know how you used to eat Mac n Cheese with Hotdogs when you were younger? Well, I am going to make the adult version of that! Except with Italian Sausage and maybe some veggies added. Ohh and maybe some bread crumbs too. Hopefully it turns Out good!
We also have the pleasure of eating dinner at a friends house. So excited to try someone else’s cooking!

Monday // Lemon-Thyme Swordfish with Rice Pilaf and Asparagus
I make this fish every so often. Swordfish is actually not very easy to cook! It’s tough like a steak and can be overcooked within about 30 seconds if not taken off the heat.
However, its flavorful and light!
Tuesday // Sausage Mac N Cheese Bake
This is my adult “Mac N Cheese with Hotdogs” meal. We’ll see how this turns out!
I plan on baking everything together and throwing some bread crumbs on top for some crunch.
Wednesday // Bacon Wrapped Sirloin with Green Beans and Mashed Potatoes
Who doesn’t look a good ‘ol steak and potatoes meal? I sear the steak with some butter, thyme and garlic! Makes for a yummy dinner.
Thursday // Beef Broccoli Lo Mein
I have some steak leftover steak that will be used for this meal. This makes for great leftovers too!
Friday // Chicken and Dumplings
I have never made chicken and dumplings before so this will hopefully be a treat! It is a recipe from Joanna Gaines cookbook!
