
Happy Meal Plan Monday, Readers!
This is going to be a fun week for the Byal household! Why you may ask?
Well, it’s our Golden Retrievers, Kylo, 2nd birthday! We plan on giving him a fun treat for being a good boy. (most of the time). And then Brendan and I will celebrate our 4th wedding anniversary! Woah!
It doesn’t seem like its been that long, but it sometimes feels longer in a way. Super glad I get to live life with Brendan. He encourages me and pushes me in a way that no one can (annoyingly… just kidding!) and I love him for it.
I am going to put into practice some of the new kitchen tools that my family got me for my birthday this past month. They include a pasta maker and pasta roller, as well as an immersion hand blender! Read below to see what meal I will make!

Monday // Reshmi Kebab Chicken with Jasmine Rice and Naan
I love Indian food! All the different types of curry are so yummy! And Reshmi Kebab is a chicken that is marinated in a ginger-garlic paste and also yogurt and then served over rice. It is incredibly flavorful and delicious! This will be my first time trying it.
Tuesday // Greek Lamb Bowls
I make this meal every so often. I like to eat different types of cuisine every week because I like to have different flavors quite often.
I make a greek seasoning mixture of paprika, garlic powder, onion powder, cumin, ground coriander, rosemary, oregano, and cinnamon, and then sprinkle that over some ground lamb.
The bowl also has couscous, cucumbers, garlicky green beans, chick peas or hummus, feta, tzatziki sauce, and then finally the seasoned lamb.
Wednesday // Brown Sugar Ham with Roasted Veggies and Orzo
This is a super simple meal. All I do is purchase a ham steak, throw some brown sugar on it and then sear it for a few minutes on both sides!
Veggies will be honey gold potatoes, squash, and broccoli. And then we’ll add some parmesan to that orzo pasta!
Thursday // Anniversary Dinner!
We are going to a super nice restaurant that is right on the water. So excited to celebrate our 4th wedding anniversary!
Friday // Homemade Pesto Pasta with Chicken
I am going to put the new kitchen items I received for my birthday into practice. Going to make some homemade spaghetti noodles with the pasta roller and then make my own pesto with the immersion blender my mom got me.
