Happy Meal Plan Monday, Readers!
The last week of February. Guys this is our last week of calm before the moving storm hits!
After this week it’ll be focused on making sure utilities are canceled, things are put away that we need for the trip, last-minute doctor appointments, last-minute friend meetups, taking down wall hangings, cleaning up the yard and house, and more.
I’m glad I don’t have to think about that while cooking. Since I had such a long week cooking I am making some more basic meals this week and trying to use up what’s in our pantry.

Monday // Chipotle Chicken Bowls
This is such a good meal for leftovers! Easy too. Rice, black beans, guacamole, salsa, chicken, queso, lettuce, yum!
Tuesday // Spaghetti With Turkey Meatballs, Garlic Bread, and Green Beans
Who doesn’t like spaghetti and meatballs? And we have to throw some sort of veggie in with all of those carbs.
Wednesday // Pan Seared Salmon with Couscous and Roasted Broccoli and Sweet Potatoes
Easy. Healthy. Delicious. Also, I have to use up the couscous in the pantry and frozen broccoli in the freezer.
Thursday // Panini Sandwiches with Cesar Salad
I will use my new cast iron grill pan for this and try to get a crispier bread this time!
Friday // Spiced Apple-Gouda Stuffed Chicken with Sweet Potatoes and Rolls
Okay, I made this recipe last week. It was good but needed some improvements. SO I am going to give it “The Short Chef” flare.
