Happy Meal Plan Monday, Readers!

It has been a few weeks since I posted my regular #mealplanmonday. I was traveling with our puppy dogs around the country for a minute there. It was a nice break away from home!

However, time to get back to all of my normal home routines, meal plans, and content schedule. Who is ready? I know I am! Enjoy this weeks meals!

Monday // Zoodles with Pesto Shrimp with Roasted Carrots and Broccoli

I ate what felt like everything in site when I was gone. So, back to some healthier eating at home!

Tuesday // Grilled Chicken with Bacon Brussel Sprouts and Roasted Sweet Potatoes

See what I mean? Gotta eat all the yummy vegetables!!

Wednesday // Chicken Gnocchi Soup

Okay, this meal is technically not “healthy” but its delicious and makes wonderful leftovers!! I promise this recipe will be up on the blog soon!!

Thursday // Leftovers

Best night of the week.

Friday // Reverse Sear Ribeye with Brown Sugar Carrots, Green Beans, and Rolls

Ribeye is my husbands favorite steak. I think he would eat it three or four times a week if I let him.

Saturday // Lemon Butter Scallops with Garlicky Green Beans and Mashed Potatoes
