Meal Plan Monday, June 3rd

Hey there! I have another set of SUPER yummy meals again this week for you all!

As if any of my meals aren’t yummy… Okay, last week I might have messed up a couple of meals. But that’s okay! Learning to become the best home chef I know is going to take some time.

I hope you guys like a lot of flavor because this week I am trying new things and even making my own version of my favorite taco from Torchy’s Tacos in Austin, TX! If you have never been to Torchy’s Taco’s I highly recommend them! If you have never been to Austin, TX I HIGHLY recommend that too!

Okay anyways, here are the meals for this week. Let me know if you like them and what you think!

Monday // Pesto Grilled Cheese with Roasted Tomato soup!

I found this recipe idea from a blogger on Instagram. Here is her Website! It looks like she’s got some pretty good recipes on there. I am not using her exact recipe for the grilled cheese and tomato soup but I got the meal inspiration from that idea!

I’ll use some fresh sourdough bread and a few different kinds of cheese for the sandwich. And honestly, I’ll probably just buy some tomato soup, but we’ll see how I am feeling the day of.

Tuesday // Chicken on top of Baked Eggplant with Roasted Veggies and Orzo

I am totally making this recipe up! I am working on challenging my cooking skills in order to get better. Also, I have never tried Eggplant before so here we go!

And, we’ll add some melted cheese on top of whatever I make, because I feel like cheese makes everything better.

Wednesday // Homemade Chicken Fingers, Sweet Potato Fries and Green Beans

For this recipe, I will bread some chicken tenderloins, slice, season and bake my own sweet potatoes and throw some green beans in the mix. I mostly just needed an easy meal to throw in for this week!

Thursday // Greek Rice Bowls

I am stoked to make this meal! Back in Pensacola, we had a Greek restaurant super close to us that we would go to a few times a month. So, needless to say, we are craving some Greek style food.

In this bowl I am going to cook some ground lamb, brown rice, throw in some cucumbers, feta, garlic green beans, roasted chickpeas and a side of naan. I will also make some Tzatziki sauce too! I hope this meal is super yummy. If it is I’ll put the recipe on here!

Friday // Thai Red Curry Shrimp

Okay, I make this recipe pretty frequently for 2 reasons.

1. It is DELICIOUS

2. It is super EASY and QUICK.

The recipe is from my favorite cookbook that I have mentioned before, Cooking for Two by America’s Test Kitchen.

Saturday // “Mr. Orange” Salmon Tacos

This is the taco from one of my favorite restaurants, Torchy’s Tacos! I didn’t find an exact recipe but it seems pretty easy to make. Take a look at the website to see the ingredients! Click Here!

I’ll throw in a Side of Mexican rice and make some of my yummy Guacamole! Too!

The Mexican rice recipe I use I will feature on here in 2 weeks! Stay tuned for a BIG recipe that you are going to love!
