Meal Plan Monday #12

Happy Meal Plan Monday, Readers!

We have been busy bees over here in California. Life has seemed to settle in a little bit and feel more normal. I have definitely been waiting for this feeling!

So, this week for meals, I have some of my “go to” meals that I know I can’t mess up. They are delicious, easy, and we always eat the leftovers.

I also am finding that when I plan 6 meals I never usually make the 6th meal! or I have to fit it into the next week somewhere. I am sticking with just 5 meals this time around.

That way we have some buffer room for when we might go out to dinner, have lots of left overs to eat, or we (I) just don’t feel like cooking!

Yes, believe it or not, there are some nights that I really, really don’t want to cook.

However, I am trying something new this week! I am trying my hand at my very own margarita pizza! Making my own dough and recipe up and everything!

Monday // Pork and Garlic Sauce over Vegetable Spirals

This is such a yummy meal and fairly easy to make! I found it from the grocery store Publix. They have a website full of meals and dinner ideas to make!

I will also make some garlic bread and green beans to go with with.

Tuesday // Beef and Broccoli Lo Mein

This is probably one of my husband’s favorite meals. Flank steak, Chinese noodles, salty flavor, and broccoli!

Makes for great leftovers! I am always working to better my steak skills so this is a great practice meal for me!

Wednesday // Homemade Chipotle

Again, one of our favorite meals. And you don’t have to pay EXTRA for guac!

Rice, spiced chicken, black beans, salsa, lettuce, cheese, guac, all the goodness in one meal. Yum-o!

Thursday // Leftovers!

Friday // Thai Red Curry Shrimp with Snap Peas and Rice

Wow, I just realized that I think I picked all of our favorite meals and put them together in one week.

Fortunately we have a lot of favorite meals! This meal is SO simple, takes less than 30 minutes to make and is healthy.

What MORE could you want out of your dinner!?

Saturday // Homemade Margherita Pizza

I have a recipe for pizza dough from one of my favorite cook books. And last time I made pizza, Brendan goes, “You should see what other skills you have to make an even better pizza!”

Not sure if it was a compliment or and “encouragement” to make something better… I’ll let you be the judge!
