Happy Meal Plan Monday, Readers!

Oh MAN I am excited for this weeks meals! Full of flavor and spices.

I am going to attempt making Lobster Rolls again. I thought I wouldn’t do it for a long time but they just keep calling my name!

And we also have visitors coming in this weekend and we are stoked!!

Best thing about living in cool places like we do is people come to US to visit!

Monday // Chicken Saltimbocca with Parmesan Orzo and Sweet Potatoes

I haven’t made Saltimbocca in awhile and it sounds so good! It is pan seared meat wrapped in prosciutto. Poured on top is a reduce white wine sauce!

Tuesday // Lobster Rolls with Thin Potatoes and Fruit

I made this about a month ago or so and it was delish. So I am trying my hand at it again! Not hard at all, just a little pricey.

I have also concocted my own recipe of thin russet potatoes that are seasoned perfectly!

Wednesday // Sheet Pan Sausage meal with Roasted Veggies and Rice

Sheet pan meals are my favorite as they are easy and delicious. And they make for great leftovers!

Thursday // Sweet Potato Boats with Chorizo Sausage

I kind of thought this meal up and not sure where I am going to take it but I’m sure it will be delicious!

Baked sweet potatoes, with chorizo sausage, black beans, avocado’s, jalapenos and some cheese. YUM!

Friday // Reverse Sear Rib-eye Steaks with Rice Pilaf and Green Beans

This is a FAMILY meal and I am so excited!

I find so much joy in cooking for others and hosting them at my house. I can’t wait for them to come!

Also, if you don’t know how to reverse sear a ribeye, you are doing steak ALL wrong. Look it up and cook it, now.
