Happy Meal Plan Monday, Readers!

Hey friends!

Well, we had a weekend FILLED with fun things and family time. It was SO fun!

We ate at new restaurants, went to a baseball game, the beach, hiking, relaxed and had some good laughs. Basically the perfect weekend!

So, here are the meals for this week! I hope you enjoy them and cook along side with me!

Monday // Breakfast Burrito’s with Fruit

We had a lot of heavy food over the weekend with family here, so we are doing a little bit of a lighter meal for this Monday.

Tortillas are filled with eggs, cheese, bacon, peppers and sausage this time!

Tuesday // Lemon-Thyme Sword Fish with Roasted Veggies and Rolls

Sword fish is probably one of my favorite seafood items to eat. People call it the “steak of the sea” because it is hardy. A little like chicken honestly. But cooked with some lemon, thyme, and a little bit of butter and it is delish!

Wednesday // Steak Tips in Red Wine Pan Sauce, Rice, and Green Beans

This is my husbands favorite meal! My mouth is drooling just thinking about it. The steak is tender, the sauce is flavorful and yummy. Oh man I am looking forward to this!

Thursday // Left overs!

Friday // Grilled Chicken Spinach Salad

This is a nice change from all of the hardy cooking I do during the week. Healthy too!

Chicken, spinach, strawberries, blueberries, pineapple, avocado, walnuts, light strawberry salad dressing and some croutons for crunch!

Saturday // Shrimp Alfredo Pasta

I made this a few weeks ago and it was so good! I am starting to nail the white sauces I make as I learn more about them. So yummy, but maybe not the healthiest 🙂

And of course, you have to add in some Garlic bread too!
