Happy Meal Plan Monday, Readers!
Can you believe it’s already November?! Ah! Now all of the Christmas music will soon start playing.
But who is excited for Thanksgiving?! I am! We will be trecking East to have some family time. Which will include lots of bourbon and whiskey distillery tours.
However, I am so excited for all of the fall flavors and cozy meals, and blankets, and cold mornings.
Thankfully it has started to cool down here in Southern California.
But, who is ready for the meal plan?! Hope you enjoy the meals for this week!

Monday // Homemade Chipotle Bowls
I love this meal because its easy, delicious, healthy, and makes for great left overs!
Seasoned chicken, black beans, rice, guacamole, cilantro, salsa, homemade queso, lettuce, cheese. All the good things!
Tuesday // Pan Seared Salmon with Autumn Sweet Potatoes and Israeli Couscous
Ohh man a fresh Atlantic Salmon with a side of what I call “Autumn” Sweet potatoes and couscous.
My Autumn sweet potatoes are just baked sweet potato wedges with cinnamon, nutmeg and paprika. Sooo yummy!
Wednesday // Chicken Thighs in Rice with Bacon Green Beans
Man, the more I write about the food, the more I start thinking about it, I start getting more ideas and things just start flowing!
I basically inspired myself. Who doesn’t!
Thursday // Poblano Roast Beef Hoagies
I am purely making this up, as per usual.
I am going to cook some ground sausage, sauté some poblano peppers, provolone and Monterrey jack cheese, put it on some toasted buns and call it delicious!
Friday // Spicy Sweet Potato Boats
I made these a few weeks ago and they were so good! Bake a sweet potato, add some chorizo sausage, avocado, corn, and whatever other goodness you want and its delish!
