
Happy Meal Plan Monday, Readers!
Hey there readers!
I have been chugging away with recipes, and getting ready to start a cookbook. I even told a new person we met this past week! Ah!!
This month I am focusing on doing less grains, mostly processed pasta. I hope you enjoy this weeks meals!
Monday // Red Snapper with Mango-Avocado Topping, Israeli Couscous and Bacon Green Beans
I can’t get ENOUGH of this mango-avocado stuff that I make. ITS SO GOOD. I swear it goes with everything too. I will also not be eating the couscous, that’s for my husband.
Tuesday // Chicken in Creamy Curry Sauce with Jasmine Rice and Naan
This is a SUPER easy meal. Sometimes I buy store-bought curry sauce because 1. its easy, and 2. its actually really good. This meal seriously takes 20 minutes.
Wednesday // Cheesy-Sausage Egg Casserole with Crunchy Breakfast Potatoes and Guacamole
I have been wanting to create my own egg casserole that’s moist. I heard you can put cottage cheese in it to help it. So, in short chef fashion I am completely making one up!
Thursday // Leftovers
Friday // Sheet Pan Sausage and Roasted Veggies
This meal is simple and makes great leftovers!
Saturday // Spaghetti Squash with Meatballs and Red Sauce
This is my alternate for pasta!
