Happy January friends! We celebrated my birthday all weekend and it was such a great time!

Monday // Roast Beef Breakfast Hash
This is such a yummy meal and makes for great leftovers!
Tuesday // Lemon Butter Scallops with Green Beans with Rolls and Couscous
We have been on a big scallop kick lately and I have been getting pretty good at making them!
Wednesday // Smash Burgers with French Fries and Fruit
Smash burgers are something my husband makes so I am off duty this night!
Thursday // Leftovers
Friday // Herb Roasted Chicken with Spaghetti Squash and Carrots
I might make a whole roasted chicken, but we’ll see.
Saturday // Beef Ramen Noodle Soup
This meal is super delicious and full of flavor!
