
Happy Meal Plan Monday, Readers!
Guess what?! It’s my birthday week!! Woohoo!! I am always so excited for birthdays, they’re just so fun! We have got some GREAT meals lined up this week, so I hope you enjoy it!

Monday // Shrimp Tacos with Black Beans, Guacamole, and Rice
I saw a picture of my shrimp tacos a couple of days ago and couldn’t get them out of my mind!
Tuesday // Saltimbocca Chicken with Creamy Parmesan Rice and Sautéed Green Beans
We have some prosciutto leftover from last week and its perfect for making saltimbocca! Also going to try a new rice recipe for a side.
Wednesday // Filet Mignon with Mashed Potatoes, Steamed Broccoli and Rolls
I haven’t made a Filet Mignon steak yet, so I thought I would give it a try this week!
Thursday // Mulligatawny Soup with Naan
Mulligatawny soup is an Indian soup that is full of spice and flavor. So delicious!
Friday // Grilled Cheese Sandwiches and Tomato Soup
We have to have some easy meals during the week!
Saturday // Shoulder Roast Beef with Mashed Potatoes, Gravy, and Brown Sugar Carrots
I’ll probably make this meal on Sunday as Saturday is my birthday, but this shoulder roast will also be used in next weeks meal plan for a breakfast hash!
