Happy Meal Plan Monday, Readers!
Happy February! We are cooking up some yummy meals this week, and even next! I had quite a few in mind and made next weeks meal plan too!
On a side note, we are ready for winter to be done here. It rains all the time and I’m sick of cleaning muddy dog paws!

Monday // Scallops with Honey-Cinnamon Sweet Potatoes, Bacon Wrapped Asparagus and Rolls
I have been on a big scallop kick lately. I honestly think I could be a pescatarian!
Tuesday // Maple Bourbon Pork Tenderloin with Italian Thin Potatoes and Strawberry Spinach Salad
There has been a pork tenderloin in the freezer for a minute, so it’s time to use it! I also have a recipe for the Italian potatoes, click here!
Wednesday // Chicken in Creamy Paprika Sauce with Zoodles, Mashed Potatoes, and Herb-Roasted Broccoli

Friday // Croissant Breakfast Sandwiches with Hashbrowns
I needed an easier meal this week. So going to throw one of our favorite types of food, breakfast food!
Saturday // Swordfish with Avocado-Mango Salsa, Parmesan Orzo and Green Beans
