Meal Plan Monday #10

Happy Meal Plan Monday readers!

It is a good day to have a good day, am I right?

It is also a good week to have a good week!

This week I am making 2 new recipes. One recipe I have heard of but never really new what it was or attempted it. The other I have made versions of but wanted to do something a little healthier.

Our lives are getting a little busier now a days. I am finding that all the meals I plan I don’t always cook! or I cook them out of order or turn them into something different.

But that’s the really great part about meal planning, is the flexibility of it all!

Monday // Beef Wellington with Green Beans and a Sweet Potato

This is the recipe I have never made before. I have some frozen ground beef and figured I should use it this week, so why not try something new!

What is a beef wellington? Well I am changing the recipe a little to use what I have but, it is a prepared fillet that is wrapped in egg washed puff pastry. There are also additives inside. This one will have some cheese and a mushroom sauce inside.

Tuesday // Greek Lamb Bowls

I made these a few weeks ago and I can’t get the taste out of my head! So we are going to do them again.

Seasoned ground lamb, couscous, cucumber, hummus, tzatziki sauce, and chick peas. Easy to make and so yummy!

Wednesday // Shrimp Alfredo Pasta

This has got to be an all time favorite of mine. It’s so easy too! I mean combing 3 of my favorite food elements.

Fish, cheese, and pasta! Can’t go wrong with that!

Thursday // Baked Chicken Thighs with Orzo and Corn on the Cob

I didn’t use the meal with chicken thighs last week so we are just going to incorporate that into this week!

And I have been on a big corn on the cob kick lately. I sure do miss having REAL sweet corn from Iowa in the summer!

Friday // Enchilada Verdes

I found a healthier recipe for enchiladas this week and I am craving some good Mexican food.

Basically you cook some chicken, use some pre-made Salsa Verde and some toppings like tomato and avocado, add a little cheese and you have yourself some yummy enchiladas!

Saturday // Shoulder Roast with veggies, Parmesan Orzo and Rolls

I am mostly making this meal so I can make a roast beef hash the next week!

If you don’t know what a “Hash” meal is, it basically is a type of breakfast meal where you throw a bunch of ingredients together in a bowl or pan, cook it and then eat it. Super good!
