Happy Meal Plan Monday, Readers!

Happy Monday! Man we have have a busy week. Ever since we moved into a new house our lives have been filled with painting, trips to Lowe’s, eating out, painting, moving, and then some more painting! Thankfully our house is starting to feel like home a little bit more.

This week is packed with some yummy meals! Who is ready?! I am! Enjoy!

Monday // Greek Lamb Bowls

I bought some ground lamb at the store this week that was on sale, score! I fill these bowls with seasoned ground lamb, chick peas, cucumbers, garlicky green beans, coucous, feta, and tzatziki sauce! Super delicious and makes great leftovers.

Tuesday // Orange Zest Breaded Chicken with Rice Pilaf, and Sauted Green Beans

I love a good, lightly breaded chicken cutlet. I actually use butter instead of eggs for this and it makes them nice and crispy!

Wednesday // Joanna Gaines “Bulgogi” rice bowls

This recipe is one of my favorites from her cookbook. If you don’t have her cookbook I highly recommend it!

Thursday // Leftovers

Friday // Mulligatawny Soup with Naan

If you’ve never tried Mulligatawny soup before, you NEED to try it. Its and Indian soup dish and its delicious!

Saturday // Steamed Lemon-Sole with Green Pea Sauce, Cinnamon Honey Sweet Potatoes and Butter Pasta

Lemon Sole is a type of white fish. Similar to tilapia. Hopefully I’ll be able to find it in the seafood section, if not, then I’ll grab some other white fish!
