Happy Meal Plan Monday, Readers!
I hope you all are having a fantastic start to your week. We had a super busy weekend. We have gotten a LOT of miles of hiking in the last couple of weekends and our legs are feel like Jello lately.
However, the views on top of a mountain are 100% worth it.
This week we are going back with some basics, trying some new recipes, and we’re also going to make tacos because ya girl has been craving tacos like crazy.

Monday // Chicken Gnocchi Soup
Don’t know what Gnocchi is? Well they are like little dehydrated potato balls, kind of like dumplings but better.
This soup is seasoned with Italian seasonings, slowly cooked chicken and also has bacon in it. It makes for perfect left overs too!
Tuesday // Sautéed Shrimp Tacos
TACOS! I have been craving tacos for so long, so we are just going to make them!
I’ll season the shrimp with some Mexican seasonings, old bay, and lime juice. Also throw in some Cotija cheese with some honey spiced corn salsa and cabbage!
It is going to be goooood.
Wednesday // Spaghetti and Turkey Meatballs with Garlic Bread
Spaghetti is not something I made often, mostly because its just really easy and not necessarily that healthy for you.
But of course, I saw a picture of spaghetti on TV last week and its been on my mind. So spaghetti time it is.
Thursday // LEFTOVERS!
Best day of the week.
Friday // Chicken and Spinach in Creamy Parmesan Sauce with Rice Roasted Broccoli
I saw this recipe on Pinterest and thought it looked good and was a twist on just regular pan seared chicken.
And I really love cheesy sauces.
Saturday // Pan Seared Salmon with Bacon Green Beans and Parmesan Orzo
Salmon is delicious and so easy to make!
Last week I made Bacon green beans and they turned out so well!
Pre-heat oven to 400 degrees. Cut up some bacon strips into smaller pieces and put on a baking sheet and into the oven for 10 minutes. Then add in Green Beans for another 10 minutes and ta-da! Bacon Green Beans.
